In a bowl, combine the FUD Quesadilla Cheese and FUD Oaxaca Cheese; mix well while adding a tablespoon of flour and the freshly ground black pepper. Next, add the cilantro and dried chilies, then mix well with your hands; set aside.
Heat a pre-greased skillet over medium-high (be sure to pre-grease the skillet each time a new cheese pancake is made).
Once the pan is greased, add some flour in the pan; this will prevent the cheese from sticking. Add a handful of the cheese mixture to the pan. As the cheese is melting, with the help a plastic spatula or wooden spoon, flatten the cheese to create a pancake shape.
After one side is golden-brown, flip the pancake to brown the other side. Once flat and slightly crispy on the outside, place the pancake on a paper towel to remove any excess oil. Let cool at room temperature. Serve warm with our FUD Hot Chipotle Ranch Dip Cream Dip.
