In a large pan, stew the tomatillos and jalapeño over medium-high heat until tender. Once stewed, peel the tomatillos.
Blend the tomatillos, jalapeño, and garlic in a blender. Pour the blended sauce into a large pan. Add the green inions and simmer on medium heat for 10 minutes, stirring occasionally.
Fry the corn tortillas for 5-10 seconds in hot oil. Add the FUD Fresco Cheese sliced and 2 tbsp. of sauce to each tortilla. Fold over the tortillas and top off with sauce.
Sprinkle the FUD Cotija Grated Cheese over the tortillas.
