Grandma’s Zucchini Bread
 
   
 
 
 
 
1 cup sugar
1 cup rice flour
3 tbsp baking powder
1 lb zucchini squash
1 stick of butter
 
 
3 eggs
¼ lb FUD Selecto Ham
¼ lb FUD Oaxaca Cheese (shredded)
Bread loaf pan
 

 
 

Grease a bread loaf pan; preheat the oven to 350°F.

Mix all dry ingredients in a large bowl with the help of a sifter; make sure all ingredients are evenly distributed, then set aside.

Cut the zucchini into small cubes, removing the tips. Bring some water to boil in a large saucepan. Once the water is boiling, add the chopped zucchini. Do not boil for more than 2 minutes; remove from heat.

Drain the zucchini, then add it to a blender along with the eggs and butter. Blend at a high speed for 3 minutes.

With the help of a rubber spatula, slowly add the zucchini mixture to the dry ingredients.

Next, add the diced FUD Selecto Ham and shredded FUD Oaxaca Cheese; thoroughly mix all ingredients, then empty the dough into the greased loaf pan.

Bake until the bread loaf rises slightly above the pan. With a toothpick or fork, check to make sure the inside of the bread does not stick.
