Spring Cheese Dip
 
   
 
 
 
 
½ lb FUD Quesadilla Cheese or FUD Oaxaca Cheese
Cambray onions or scallions (green part only)
1 fresh red pepper (cut into small cubes)
1 cup FUD Mexican Cream
1 cup mayonnaise
1 bunch freshly chopped cilantro
 
1 cup FUD Cotija Cheese
⅓ cup olive oil
1 tbsp chili powder
1 bunch freshly chopped parsley
1 red onion, minced
Freshly ground pepper (to taste)

 
 

In a food processor, add the FUD Quesadilla or Oaxaca Cheese, mayonnaise and FUD Mexican Cream; blend until you have a thick, consistent mixture.

In a bowl, add the cheese mixture and olive oil; stir thoroughly.

Add the FUD Cotija Cheese to the mixture. Finely chop the remaining ingredients, and then blend everything together until smooth and consistent. Season the mixture with salt and pepper as desired.

This dip is typically served with crackers and bread, but it is also recommended as a stuffing for chicken, fish, cheese balls and salads.
