Tamarind Glazed Turkey Breast
1 lb FUD Natural Turkey Breast
½ bottle honey or maple syrup
3 tbsp Dijon mustard, seeded
2 lemons (juice only)
2 tbsp paprika
1 oz cloves
1 bottle tamarind concentrate
1 cup olive oil
Freshly ground pepper


In a bowl, pour the olive oil and tamarind concentrate; thoroughly mix these ingredients together so they are well emulsified.

Add the honey (or maple syrup) and the lemon juice; continue mixing until everything is smooth and consistent.

Incorporate the Dijon mustard and paprika with a small whisk until a slightly thick marinade forms.

Preheat the oven to 350°F. Place the entire FUD Natural Turkey Breast into a greased pan. With a sharp knife, make cross sections, forming diamonds of no more than 2 inches deep. Fit a clove into the center of each diamond; season with salt and pepper as desired.

Once the FUD Natural Turkey Breast is well covered by the marinade, place it in the oven for 1½ hours until all the sauce slides to the bottom of the pan; add the excess sauce back into the blender, then blend and strain. Serve the blended sauce over the hot turkey breast.
