1. Preheat oven to 375°F. Grease 13 x 9 inch baking dish.

2. In high-sided skillet or saucepan, melt butter over medium heat; cook onion and garlic for about 5 minutes or until softened. Sprinkle flour over top; cook for 2 minutes. Gradually whisk in milk; bring to simmer. Cook, stirring, for about 5 minutes or until thickened. Season with salt and pepper. Remove from heat and stir in half of the cheese until melted; set aside.

3. In prepared baking dish, layer half of the sweet potatoes, one-third of the ham, half of the Yukon Gold potatoes, another one-third of the ham, remaining sweet potatoes, remaining ham and remaining Yukon Gold potatoes. Top evenly with cheese sauce.

4. Cover with foil and place on baking sheet; bake for 60 minutes. Remove foil; bake for 45 to 60 minutes or until potatoes are tender. Sprinkle with remaining cheese and broil for about 3 minutes or until cheese is melted and golden brown. Let stand for 15 minutes before serving. Sprinkle with fresh chives.
