1 package (12 ounces) FUD® Original Sliced Bacon, cut into ½-inch pieces
½ large white onion, chopped
3 garlic cloves, minced
2 serrano chile peppers, finely chopped
2 cans (15 ounces each) pinto beans, undrained
1 can (14 ounces) diced fire roasted tomatoes, undrained
1 bottle (12 ounces) Mexican-style beer
4 FUD® Hot Links, sliced ¼-inch thick
¼ cup chopped fresh cilantro
In large saucepot, cook FUD® Original Sliced Bacon over medium-high heat 12 minutes or until crisp, stirring frequently; discard all but 3 tablespoons bacon drippings.
Add onion and cook 5 minutes, stirring occasionally. Add garlic and serrano; cook 1 minute, stirring constantly. Stir in beans with liquid, tomatoes with liquid, beer and FUD® Hot Links; cover and reduce heat to medium-low. Simmer 20 minutes; stir in 3 tablespoons cilantro. Serve garnished with remaining 1 tablespoon cilantro. Makes about 12 cups.
