Lower Sodium Turkey Franks and Oaxaca Boats

  • 8 FUD® Lower Sodium Turkey Franks
  • 2 cups prepared mashed potatoes
  • ¼ cup frozen peas and carrots, thawed
  • ¼ cup frozen sweet kernel corn, thawed
  • 4 ounces FUD® Oaxaca Cheese, shredded (1 cup)
  • 1 can (15 ounces) black beans, rinsed and drained
  • ½ cup favorite salsa

  • Preheat oven to 375°; line cookie sheet with aluminum foil. Split FUD® Lower Sodium Turkey Franks lengthwise in half but do not cut all the way through; open flat on prepared cookie sheet.
  • In medium bowl, stir mashed potatoes and frozen vegetables; evenly spoon potato mixture onto FUD® Lower Sodium Turkey Franks and sprinkle with FUD® Oaxaca Cheese. Bake 10 minutes or until hot.
  • In small saucepot, heat beans over medium heat 5 minutes or until heated through, stirring occasionally; stir in salsa. Serve FUD® Lower Sodium Turkey Franks topped with bean mixture.
