5 ounces FUD® Original Chorizo, casing removed (1/3 cup)
3 cups prepared mashed potatoes
2 ounces FUD® Oaxaca Cheese, grated (½ cup)
1½ cups masa flour
1 cup warm water
4 cups corn oil
½ medium red onion, thinly sliced
1 cup salsa verde
½ cup FUD® Mexican Style Cream
In small saucepot, cook FUD® Original Chorizo over medium-high heat 3 minutes, stirring occasionally; add 1 cup mashed potatoes and FUD® Oaxaca Cheese.
In medium bowl, add flour; with wooden spoon, gradually stir in water. With hands, knead dough in bowl 3 minutes; gather dough into a ball. Cover bowl tightly with plastic wrap; let stand 1 hour.
Add remaining 2 cups mashed potatoes to dough; knead dough until potatoes are incorporated.
With wet hands, form dough into 1½-inch balls (about 3 tablespoons each); with hands, press each ball into 4-inch disk (about ¼-inch thick). Place about 2½ tablespoons chorizo mixture in center of each disk; fold dough in half over filling to enclose and pinch edges together. With hands, roll each molote into a cylinder shape.
In medium saucepot, heat oil over high heat 8 minutes (about 350°). In batches, fry molotes 5 minutes or until golden brown; with slotted spoon, transfer to paper towel-lined cookie sheet. Makes 12 molotes.
Serve molotes garnished with onion, salsa verde and FUD® Mexican Style Cream.
