Preheat oven to 400°; grease muffin tin cups with butter, including rim around top of cups. In small skillet, cook the FUD® Original Cooked Ham Bulk over medium heat 5 minutes or until browned, stirring occasionally; transfer to small bowl; cool 10 minutes. Stir in ¾ cup FUD® Queso Fresco Mexican Style Crumbling Cheese.
In medium bowl, whisk eggs; whisk in milk, sour cream, oil and chiles until well combined. In large bowl, whisk flours, sugar, baking powder, salt, pepper and chili powder until well combined. Make a well in center of flour mixture; add egg mixture and stir with wooden spoon just until combined.
Fill prepared cups halfway with batter; evenly divide FUD® Original Cooked Ham Bulk mixture into center of batter in cups, pressing down slightly. Evenly divide remaining batter into cups; gently press down batter around edges (muffins will bulge slightly in center). Evenly sprinkle muffins with remaining FUD® Queso Fresco Mexican Style Crumbling Cheese. Place muffin tin on cookie sheet; bake on cookie sheet 25 minutes or until toothpick inserted in center of muffins comes out clean.
Cool in pan 5 minutes; transfer to wire rack and serve warm. Makes 12 muffins.
