Attach deep fry thermometer to medium saucepot; add oil and heat to 350°over medium heat (about 15 minutes).
In small bowl, mash avocado and sour cream. Makes about ¾ cup.
In medium bowl, toss turkey, cheese, bell pepper, beans, corn, onion, chili powder, cumin, salt and black pepper. Makes about 2½ cups.
Place wrappers on work surface with 1 corner of each facing you; place heaping 2 tablespoons turkey mixture in center of wrappers. Brush edges of wrappers with water; fold bottom corner over filling, roll up tightly twice, fold in sides and roll up tightly.
In batches, add egg rolls to hot oil; fry 5 minutes or until golden brown and crisp, turning once. Serve with avocado crema.
