Preheat oven to 350°. Heat cast iron or oven-proof large skillet over medium heat 2 minutes. Add chorizo; cook 5 minutes or until cooked through, stirring frequently; drain if desired. Reserve 2 tablespoons chorizo.
Sprinkle cheese over chorizo in skillet. Bake 10 minutes or until warm, being careful not to overcook or the cheese will become chewy.
Serve from skillet topped with reserved chorizo along with tortilla chips and salsa.
Chef Tips Cooked chorizo can be transferred to a clay pot before adding cheese and baking. Garnish the dish with chopped fresh tomatoes and cilantro for a little color.
