Prepare outdoor grill for direct grilling over medium-high heat. Cook tortellini as label directs; drain and cool slightly.
Place sausages on hot grill rack; cook, covered, 8 minutes or until lightly charred, turning occasionally. Brush both sides of Panela cheese slices with oil; place on hot grill rack and cook 3 minutes or until browned, turning once. Transfer cheese and sausage to cutting board; cool slightly. Cut cheese and sausage into ¾-inch pieces.
In large bowl, toss tortellini, sausage, cheese, tomatoes, onion, spinach, olives and dressing. Serve salad sprinkled with Cotija cheese and basil. Makes about 8 cups.
