In large skillet, heat oil over medium heat; add sausage, tomatoes, jalapeños and onion; cook 5 minutes or until lightly browned, stirring frequently. Add eggs; cook 3 minutes, stirring gently. Add salsa; cook 1 minute or until heated through. Stir in tortilla strips; sprinkle with cheese.
Serve migas topped with sour cream garnished with cilantro sprigs, if desired.
